Squirrel Casserole

2-3 cups of boiled/deboned Squirrel Meat
Broccoli, Fresh or Frozen
1 sliced or diced Onion
1 can Cream of Mushroom Soup
1/4 cup Hellman's mayo
1 cup crushed Italian Bread Crumbs
1 cup grated Cheddar Cheese
1 sliced tomato

In a casserole dish, place your boiled/deboned Squirrel meat on the bottom .

Add your Brocolli on top of the Squirrel meat.  Now add the onion.

In a seperate Bowl, mix the Cream of Mushroom soup and the Hellman's together, and mix thoroughly.  Spread it evenly over the top.

Add the Cheddar over top of it.
Now take your crushed Bread Crumbs, and spread it evenly over the top of your cheese.

Take you tomato slices and place over the top.
Place in a 350 degree oven and bake uncovered for roughly 45 minutes.

Pull out, and let it stand for 5-10 minuted and serve. You'll go "Nuts" for Squirrel Casserole.

This recipe also works GREAT with Rabbit.
